As Lundies Assistant Chef  you will be an integral part of the Lundies kitchen. Working alongside and supporting the Lundies Chef,  You will embrace the concept of the property itself, and beresponsible for all food experiences at Lundies House. You will relish the challenge and excitement of opening this new accommodation destination, andbe a key part of achieving food excellence and quality, whilst establishing a successful and recognised dining operation. 


Key Duties

Ensuring the overall day to day smooth running and operation of the kitchen by supporting the Lundies Chef in the management of the kitchen.

Helping the Lundies Chef with the development of new dishes and menus.

Catering for resident guests, and occasional exclusive hire guests, breakfast, afternoon tea, dinner, BBQ’s and outside dining experiences, for numbers of up to 20 persons.

Delivery of quality food dishes, utilising quality local produce from our in-house estates, gardens and external suppliers.  

Help implement food led Guest Activities and Experiences.

Maintain H&S aspects of the kitchen, including good hygiene and cleanliness.

Be a good communicator, have a positive manner, and the ability to build good working relationships with your colleagues and suppliers alike. Interaction with our guests will also be required on occasions; presenting food dishes to guests and acting as a host.

Be a food ambassador for Lundies alongside our properties and estates.


Personal Attributes

Skilled and experienced chef currently working at Commis – Sous level.

Experience working at 2* Rosette level or above would be highly advantageous.

Passionate about delivering quality guest food experiences and achieving guest satisfaction.

Knowledge of Scottish & European dishes.

A willingness to learn and be inspired by others, growing and developing your existing skills and knowledge.

Be passionate about creating quality inspiring dishes using natural ingredients which are well-presented.

You will be comfortable being front of house on occasion as necessary, acting as a host when presenting food and assisting with ensuring the seamless operation of the kitchen.

Knowledge and experience of foraging would be an advantage. 

Ability to work independently and as part of small friendly team.

Hold a current valid driving license.

Be passionate about the Highlands of Scotland; having first-hand knowledge of the local area would be highly advantageous.

Have a personal interest in creative and active subjects such as design, interiors, high-level cuisine and outdoor pursuits inline with Wildland’s principles.
