As Lundies Chef you will be the kitchen leader and ‘culture bearer’. You will embrace the concept of the property itself, and take responsibility for all food experiences at Lundies House. You will relish the challenge and excitement of opening this new accommodation destination, and be responsible for delivering food excellence and quality, establishing a successful and recognised dining operation.
You will work closely with Wildland’s Concept & Design Manager, to set and adopt the tone and embrace the challenges of excellence in all we do – and Wildland’s Chef Manager to run a professional and top-quality operation.
Ensuring the overall day to day smooth running and operation of the kitchen through good management and organisational skills.
Work successfully alongside the Lundies Manager to meet our guests and business needs.
Developing a Lundies House kitchen recipe book, through creating daily set dinner menus, quality dishes and activity/event meals for food led experiences offsite for our resident guests.
Catering for resident guests, and occasional exclusive hire guests, breakfast, afternoon tea, dinner, BBQ’s and outside dining experiences, for numbers of up to 20 persons.
Delivery of quality homemade food dishes, utilising quality local produce from our in-house estates, gardens and external suppliers.
Help implement food led Guest Activities and Experiences.
Oversee the development and growth of the Lundies Assistant Chef.
Maintain H&S aspects of the kitchen, including good hygiene and cleanliness.
Understand and control the operational P&L of Lundies Kitchen.
Ensure compliance with licensing laws, health & safety and other statutory regulations.
Food stock control, and restocking, through the use of existing approved suppliers and building relationships with new suppliers.
Be a good communicator, have a positive manner, and the ability to build good working relationships with your colleagues and suppliers alike.
Interaction with our guests will also be required; presenting food dishes to guests and acting as a host so it is important you are comfortable with people.
Be a food ambassador for Lundies alongside our properties and estates.
Hold experience managing a successful kitchen in a guesthouse or hotel preferably within the luxury market.
Passionate about delivering quality guest food experiences and achieving guest satisfaction.
Skilled and experienced chef currently working at Sous – Head level.
Experience working at 2* Rosette level or above would be highly advantageous.
Experience of menu development and knowledge of Scottish & European dishes.
Be passionate about creating quality inspiring dishes using natural ingredients which are well-presented.
You will be comfortable being the face of Lundies Kitchen, always at hand for guests front of house as necessary, acting as a host when presenting food and ensuring the seamless operation of the kitchen.
Good attention to detail and the ability to manage your workload in an efficient manner.
Be a confident kitchen leader and hold the ability to work independently to meet company food standards and possess an openness to take guidance from your seniors and colleagues alike.
A willingness to be inspired and a desire to inspire others.
Be creative with regards to food concept and food development.
Knowledge and experience of foraging would be an advantage.
Have knowledge and understanding of licensing laws, health & safety and other statutory regulations.
Ability to work independently and as part of small friendly team.
Hold a current valid driving license.
Be passionate about the Highlands of Scotland; having first-hand knowledge of the local area would be highly advantageous.
Have a personal interest in creative and active subjects such as design, interiors, high-level cuisine and outdoor pursuits inline with Wildland’s principles.
